Our chief cook Dmitry Leonov loves September with the fresh smells of ripe vegetables from Dorogomilovsky Market having something exuberantly-wonderful. Autumn has sneaked in unnoticed and that wonderful day of the calendar shall set in when it one can forget about global warming and okroshka (cold soup) on Caucasian milk. Their place for the long four months will be taken over by spinach or cabbage phali with beetroot, vegetable salad with nuts, beef giblets kuchmachi, liver kupaty, baked ham with pepper, chicken roll with rabbit liver, cold red bean lobio, fragrant bean soup and light mushroom soup. For breakfast there shall be curd round rissoles with edible greens, as well as “ladies finger” grapes and green pineapple guava. Comparable with these desserts, conceived by the Lord, are pomegranate sorbet with grape-brandy (chacha) and cherry pie with almond crust. Are you longing for the summer that has passed? In vain.
Fortune is around, because the whole of autumn is ahead with new wine and cellar full of cans with picked green tomatoes!
